1. Mikroorganisma : Bakteria dan kulat.

2. Haiwan/serangga perosak (melalui najis + air liur ) : tikus,lipas,cicak.

3. Bahan kimia : Aditif

4.Tindak balas enzim menyebabkan makanan cepat rosak.

5. Perubahan fizikal- makanan berubah dari segi bau,tekstur,warna.

6. Bendasing-semasa proses sedia dan memasak/menyimpan.
